Homemade frozen breakfast

Mini Me is really into those Eggo frozen waffles right now, you know, those little hard Frisbee shaped discs that Eggo sells for about .25 a piece.  Well yesterday I had some free time in the morning and thought, I could make some waffles and pancakes and freeze them and cook them in the microwave when the kids decided they wanted them.  So that's what I did.  I love, love, love my Oster waffle maker that I got for about $10 after rebates.  It makes the most delicious big, fluffy waffles like you get at IHOP in about 1 minute.  I used my homemade pancake mix recipe, added eggs, oil and water and whipped up a batch of waffles.  I let them cool and then placed them in Ziploc gallon sized bags in the freezer.  I heated one up for about 1 minute this morning and ate it with some strawberry cream cheese, YUM!
